In that vein, here is tonight's dinner:
On the left are calabacitas (zucchini, onions, garlic, and corn--we forgot to buy green chile to add to it). On the right is something we call Quorne adobada (a vegetarian version of carne adobada made not with pork obviously but with Quorn in red chile) topped with cheddar cheese and served over pinto beans. We also had guacamole and chips while we cooked dinner.
Dessert was a 100-calorie fudge popsicle.
In case you're wondering, breakfast was a soy-nut butter and grape jelly sandwich and coffee with milk.
Lunch was a Michaelina's frozen lasagna, a pear, and a bag of Cheez-its.
