Healthy Dinner

I'll bet my dinner was healthier than yours was!

Onion, red pepper, sweet potato, carrots, and kabocha (Japanese pumpkin). I also added mushrooms and broccoli.

This was my "cheat meal" for the week. I'm back to dieting, believe it or not. All my efforts last week resulted in a five pound loss! It's a bit too much for one week, so I decided on tempura soba for dinner tonight. Deep fried goodness, served with soba noodles and mentsuyu, a kind of a cross between a dipping sauce and a soup.

So good!
